All Things Chocolate

Heather and I did a lot of baking over Christmas.  My Dad used to make White Chocolate Covered Ritz Peanut Butter Sandwiches and we loved them.  We have not made them in a couple of years, so we wanted some this Christmas. They are so easy and you only need a couple of ingredients.

Here’s what you need:
Your favorite peanut butter (I used crunchy peanut butter)
Milk/white chocolate Bark Coating
Wax Paper
Ritz Crackers

Here’s what you do:
Spread peanut butter on one side of a Ritz cracker. Spread it kind of thick. Put another cracker on top of that to create a peanut butter Ritz sandwich. Prepare a lot of these before you melt the chocolate.

Melt the Bark Chocolate in a saucepan.  When the chocolate is completely melted, drop the peanut butter Ritz sandwich inside. Turn it over so it is well coated and put it on wax paper to harden. It won’t take long to harden. You have to work relatively quickly with the chocolate so it doesn’t harden.

Heather and I made half white chocolate and half mik chocolate. 

We also made Brownie Covered Oroes, another recipe from Picky Palate.  This is another simple, but yummy recipe. I forgot to take pictures, so I used one from her website. We didn’t put the white chocolate on top, but I’m sure it would be good.

Brownie Covered Oreos
1 Brownie mix (or use your own brownie recipe)
1 package Oreos, I used the Holiday ones with red icing
White chocolate, melted for drizzle, or Wilton White frosting pen works great (we didn’t use these)
White nonpariels Sprinkles

Preheat oven to 350 degrees F. Prepare brownie batter according to package directions. Leave in mixing bowl. Dip Oreos in brownie batter then place in bottom of cupcake tins that have been generously sprayed with cooking spray. Bake for 12-15 minutes, until brownies are cooked through (doesn’t take long). As soon as you remove, take a plastic knife and run along edges, (this is VERY important so you get the cookie out with brownies not stuck to pan). It actually worked better for us if we left them cool completely before we cut them out. Otherwise, they broke apart a little bit.  We also filled each muffin tin pretty full, so we used two boxes of brownie mix. 

Let cool for 5 minutes, remove drizzle with melted white chocolate or the Wilton White icing pen, sprinkle with nonpariels and EAT! Makes entire package of Oreos.
