We had a fantastic Thanksgiving-lots of yummy food, football, naps and amazing weather. I’m trying to get back in the swing of things at work today while Nick is still off for the next two days playing tour guide and taking his Dad around DC.
We will just skip right over the hot mess that was Tennessee football this weekend and go straight to a delicious dessert recipe I made this weekend.
I’ve said it before, but Ms. Paula Deen knows her stuff and her banana pudding did not disappoint. Plus, isn’t Not Yo’ Mama’s Banana Pudding a fun name?
2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed
Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.
Tip: I actually put mine in a trifle bowl, so I just do a layer of cookies, bananas and pudding mix and repeat until I get to the top of the bowl. I used chessmen cookies this year, but used Sandies Shortbread last year and thought those were better. Either will work!
Besides eating pounds of banana pudding, here are a few other things I did over Thanksgiving:
Hosted my very first Thanksgiving at our apartment. Thankfully, my mother-in-law is an amazing cook and I only had to cover dessert.
Did a little reading and of course, Nicholas Sparks always cues the waterworks.
Ran a Thanksgiving Day 10K. I think my official time for 6.2 miles was around 56 minutes, but why do I always end up running closer to 7 miles? I need to run on the inside of the course from now on. And wow, my freckles are really standing out with this pale, winter skin.
Had lots of time with my sweet puppy. She loves having visitors at the house!
